Cérès – Merlot

« I’m Cérès. Goddess of agriculture, harvest and fertility. I watch over the vines of each estate of Chéreau-Carré, all along their cycles.
My favorite grape variety is Merlot.
Very productive and known all over the world, Merlot is tasty and intense. When tasted young, it brings rich black fruits flavors. »

Appellation: Vin de Pays du Val de Loire


Varietal: 100% Merlot


Harvest: Harvest occurs beginning of october. After harvest we use a technique called
“thermoregulation” to warm the fruits in order to increase their fruitiness.
Then fermentation starts and last 15 days around.


Wine making process: Fermented with controled temperature.

The wine is kept on vats for 2 months before being bottled at the estate.


Terroir: The 15 years old vines are well situated on a sunny micaschist plateau
protected from spring frost.


Vine age: 20 to 30 years old


Food pairing: Perfect at the aperitif or with white meat. Of course it will
pair perfectly with red meet and cheeses.
